Blog #6: Cooking Up Something Big

Hey Fans,
Happy Belated Earth Day! If you’ve been reading my blogs and been thinking: “Wow these recipes look amazing! I wish I had them”, then you’re in luck! For my final product I am creating a cookbook with my top 12 recipes created from this process, all nutrient dense and plant-based/vegetarian. These can be easily replicated at home or for large crowds (for example hundreds of people at Miriam’s Kitchen). Besides a cookbook that you guys will be able to see in person, I’m also developing a website which will be fully available next week where all my recipes will be along with in depth reasons of what makes these recipes nutrient dense with ingredient breakdowns (similar to my blogs). With all that being said, let’s get into this week!
Over the weekend and at the end of last week I started to create my website which has been a new and super fun experience for me! I’m about halfway through and am constantly learning how to use it but a first draft is coming soon so stay tuned everyone.
On Tuesday I returned from California early in the morning and got straight to work developing and testing the recipes that I mentioned last week. They all turned out amazing but I do have a few tweaks that I added into the final recipes. Also on Tuesday I attended a food and climate webinar for earth day where I was able to learn more about how eating dairy and meats constantly promote greenhouse gas emissions and global warming. It was very informative and gave me an ever deeper insight on how my project now only affects people on an individual level but has greater global environmental benefits.
While I haven’t been in the kitchen yet this week, I’m heading back on Thursday for a volunteer dinner shift and to begin recipe testing for Volunteer Appreciation day, which if you remembered from my last blogs I’m creating the menu for!
Well, that’s a wrap! Thanks for sticking with me through another long blog. Below I’ve attached some photos of this week’s dishes, including a newer one: sticky miso tofu! This dish can easily be made in mass quantities and is so so good! The tofu is high in protein, a complete protein, and lower in fat and cholesterol compared to steak or chicken as the protein. It’s a well rounded dish, and simple as well perfect for any dinner or lunch and easy to make. While that’s a much shortened version of the ingredient breakdown, my future website and book will include more information for everyone to read about.
